[Great Hall of Rockwall] DOA stuff

  I talked to Daniel and Kelli today about lunch plans.  We had thought about doing chicken soup, but beef stew might work out cheaper.  We wanted to serve bread, cheese, fruit and either the stew or soup.  I will get Daniel to work up a budget tomorrow.  We are planning for 50, right?  We may need Karen to go shopping or have the money to get the ingredients advanced.  We can talk about that at the meeting.
   
  Chicken Soup:
   
  chicken (white meat is best, but could use whole chickens) 
  chicken broth
  onion or leeks
  garlic
  corriander
  salt
  pepper
  and saffron, if we can afford it
   
  Beef Stew
   
  marinade:
  orange juice
  garlic
   
  Stew:
  marinated beef cubes (cut up beef knuckle is inexpensive)
  salt
  pepper
  flour
  butter
  cream
  beef glace' (beef bones cooked down into broth)  
  red wine
  carrots
  peas
